广东中山等十个县稻米中微量元素分析
The Contents of Trace Elements in Rice from Guangdon Province
【摘要】 <正>微量元素对人类的生命和健康关系十分密切。这些元素在体内的生理意义不尽相同,如铁在机体中参与氧化、运输、交换和组织呼吸过程;锌是很多金属酶的组成成分或是酶的激活剂,并与RNA、DNA和蛋白质的生物合成有密切联系;铜、锰、铝、硒等亦是组成很多酶的成分;是维持人体正常生理不可少的元素。但这些元素在机体内的含量超过一定的阈值或缺乏时,可使人致病甚至威胁生命。稻米是我国南方人民的主要粮食,测定稻米中微量元素含量,为人体营养和健康有关的食物成分提供重要资料。本文总结了近几年测定广东中
【Abstract】 In 1976~19S3,845 samples of dried late rice from Zhongshan, Dongwan, Zengcheng, Wuhua, Haifeng, Chinghai, Chauan, Sihui, Fengkai and Lechang counties of Guangdon Province were collected and the contents of lead(Pb), chromium (Cr), nickel (Ni), molybdenum (Mo), barium (Ba), cadium (Cd), cupper (Cu), iron (Fe), cobalt (Co), manganese (Mn), zinc(Zn) in these samples were analyzed by emission spectrum technique, the contents of selenium in these samples were analyzed by 2,3-diamino naphthalene fluorimetric method. The average value (mg/kg) of these trace elements in rice were as follows: Pb 0.52 + 0.81 Cr 0.16?.25 Ni 0.21 + 0.28Mo 2.52?.77 Ba 0.93?.96 Cd 0.18?.25Cu 4.16 + 3.63 Fe 26.98?1.99 Co 0.06 + 0.03Mn 2.42 + 1.13 Zn 6.11?.71 Se 0.036 + 0.02
