分离大豆蛋白质的营养学与食品卫生学研究——黑龙江省新开发的食物资源
A study of Nutrition and Food Hygiene of Isolated Soybean Protein as New Developed Food Resource in Heilongjiag Province in China
【摘要】 本文用化学分析与动物实验方法研究了国内尚无报告的,黑龙江省新开发的分离大豆蛋白的营养与食品卫生质量。研究结果说明,这种新开发的分离大豆蛋白制品,营养质量接近或达到国外同类产品水平,食品安全性是可靠的。
【Abstract】 The nutritional and hygienical characteristics of isolated soybean proteinwere studied by chemical analysis and rat experiment.This product has not yetbeen reported in China.The results indicated that the nutritional quality ofisolated soybean protein is about the same with the analogous product prepared in other countries,and its food safety is satisfactory.
