克山病病区与非病区几种粮食中色氨酸含量对比分析
Determination of Tryptophan in Several Grains from Endemic and Non-endemic Areas of Keshan Disease
【摘要】 <正> 色氨酸是人体不能合成的必需氨基酸之一,缺乏色氨酸可影响5羟色胺和尼克酸(Vpp)的合成。色氨酸在绝大多数谷物中含量低,且易被氧化和光解,已被公认为第二限制性氨基酸。为进一步探讨克山病病因和发病机理与氨基酸之间的关系,初步对河北、陕西、黑龙江等省病区和非病区280例莜麦、小麦、玉米及大豆中色氨酸含量进行了分析。
【Abstract】 For studying the etiology of Keshan disease,contents of tryptophan in 280grain specimens from endemic and non endemic areas of Keshan disease weredetermined by spectrophotometry using papain protein hydrolysate.The resultsshowed that tryptophan in maize,wheat and soybean had not any difference,but in oats was 119.5±2.4mg% from endemic area;137.9±2.8mg%from non-en-demic area,that the contents of tryptophan in oats was lower from endemicarea than non-endemics.The difference between endemic and non-endemic areaswas significant(t=4.6,P<0.01).In view of this fact,the lower contents oftryptophan in oats may give a clue for investigating the etiology of Keshandisease.
