鼻咽癌高低发区食物及饮水中亚硝酸盐、硝酸盐和仲胺含量的比较

【摘要】 <正> 仲胺与亚硝酸(或亚硝酸盐)在动物或人体内、外,于适当的酸度下,均能合成强烈的致癌物质——亚硝胺。在国内食管癌的研究中发现这些物质在高发区某些食物内含量较高。近几年来我们在广东省鼻咽癌高发区的四会县、中山县及低发区五华县采集农民的食物及饮水等,进行亚硝酸盐、硝酸盐及仲胺的测定,以探讨其与鼻咽癌发病的关系。

【Abstract】 N-nitroso compounds could be formed in vitro and in vivo by the interaction of nitrites with secondary amines. These precursors of N-nitrosoamine distributed widely in various foodstuffs and dringking water.229 samples of rice, 180 samples of drinking water and 208 samples of preserved vegetable from the high risk areas (Sihui and Zhongshan counties) and the low-risk area (Wuhua county) were collected and their nitrite, nitrate and secondary amine contents were analyzed colorimet-rically.The results indicated that the nitrite contents of rice in high risk area-Sihui county were lower; but the nitrate contents were higher than that from low risk area-Wuhua county, the differences were significant statistically.In drinking water both the nitrite and nitrate contents were higher from Zhongshan county than those from Wuhua county because of serious contamination of drinking water in Zhongshan county.In addition, the nitrite contents in preserved vegetables from Zhongshan were higher than those from Wuhua, but those from Wuhua were still higher than those from Sihui, the differences were all significant statistically. On the other hand, nitrate contents in preserved vegetables from Sihui or Zhongshan were lower than those from Wuhua and secondary amine contents in preserved vegetables from Sihui or Zhongshan were higher than those from Wuhua, the differences were not significant statistically.Above data suggested that there was no definite correlation between the nitrite, nitrate and secondary amine contents in these samples with NPC mortalities in various counties.
