【摘要】 本文概述了南枣的加工史。指出南枣是南北货中“京果”的一种,由来已久。认为南枣起源于元代,距今约有640～700年的历史。历史上以东阳茶场所产的最有名。所用鲜枣品种有“大枣”、“南京枣”以及它们的“天生枣”。推测大枣品种出自东阳茶场,其后流传他处。文中表列了东阳、义乌和兰溪三县历年的南枣产量。指出以上两种“天生枣”是自然实生变异,过去虽不为人们所注意,但却是劳动人民长期选择和培育而成的良种,品质多处胜过原种。目前产区枣的品种,文献所载,传误较多,整理和发掘这些优良品种资源,可以提高当地枣的品种水平,有利于今后南枣生产的发展。加工上,认为目前的烫枣、煮枣和烘枣等设备有亟待改进的必要。更多还原

【Abstract】 The present paper is an investigation on the history of technology of Nan-Zao production.Nan-Zao,a famous native dried fruit,is dehydrated by use of the fruits of Chinese jujube or Chinese date(Zizyphus sativa,Gaertn)in Jinhua district.The history of Nan Zao processing is rather long-It can be traced back to the Yuan Dynasty(1271--1368).’Da-Zao’ and ’Nanjing-Zao’ are the two principal cultivars of Chinese date.The former is grown in Yiwu and the later in Lanxi.Both are suitable for dehydration and processing.It is found that two kind of ’Tian-sheng-Zao fruits are the natural seedling mutations of ’Da-Zao’ and ’Nanjing-Zao’,both are of better quality than their parent cultivars for processing.Additionally,the cultivars,origins,growing areas,manufacturing processes and equipments of the Chinese date fruits are discussed,and the total annual production of dried fruits over the past several years are also-estimated.更多还原
