中高档猪肉产业链组织模式研究

【摘要】 论文在文献查阅、专家访谈和实地调研基础上,以中高档猪肉产业链组织模式为研究对象,运用系统分析与决策分析思想,沿着模式的“趋势及理论分析—实践研究—评估选择—实施”逻辑展开。目的在于为拟进入和已进入中高档猪肉产业链的投资主体进行组织模式选择提供科学依据,为政府推进农业产业化进程、提高中国肉类产品国际竞争力以及保障国家食品安全提供解决思路。论文主要包括: 1)对猪肉产业链内涵及特征进行了系统理论分析,并从猪肉消费、贮运销售、屠宰、饲养、繁育、相关产业环节及产业链组织模式等方面对国内外猪肉产业链现状进行了归纳;研究了消费者需求、产业链产品(质量)供给能力、政府产品质量管理体系之间的互动机理,并通过对比、演绎分析,指出了中国猪肉产业链发展的障碍,提出构建适宜产业链组织,保障中高档猪肉有效供给的重要性和发展趋势。 2)在系统分析猪肉产品质量特性基础上,利用类变量分析法研究了猪肉产品质量形成机理,指出中高档猪肉产业链实施一体化经营的内在要求;探讨了产业链整体目标、功能主体、核心利益主体、产业链价值创造及各功能主体联结方式五大要素对一体化经营产业链组织的作用机理;研究了中高档猪肉产业链组织的功能主体、核心利益主体及产业链价值创造特征,分析了核心利益主体投资环节及投资方式对产业链组织模式的内在影响,并从理论上阐述了合同契约型、纵向一体化型、混合型以及混合纵向一体化型四大类若干种可能的中高档猪肉产业链组织模式及其特征效应。 3)以农业产业化国家重点龙头企业及猪肉认证企业为研究对象,对中国中高档猪肉产业链现状进行了描述;利用对比、归纳方法,从功能主体、核心利益主体及产业链组织演进生成等方面分析了目前中国中高档猪肉产业链组织及组织模式特点,发现实践中合同契约型、纵向一体化型组织模式较少,混合型及混合纵向一体化型组织模式较多,指出猪肉产品供求矛盾、国家食品安全准入、农业产业化发展、相关理论的支持是目前中高档猪肉产业链组织模式形成的动因,且猪肉产业链一体化经营对消费者、政府以及相关主体均有较强效应。 4)根据理论及实践分析结果,筛选出7种典型的中高档猪肉产业链组织模式;建立了中高档猪肉产业链组织模式评估层次指标体系,并分别从质量、数量、成本、差异性、敏捷性及持续性方面对典型组织模式进行了评估,提出了核心利益主体选择中高档猪肉产业链组织模式的定性流程、影响因素及定量操作方法。 5)系统地分析了中高档猪肉产业链组织模式实施的构建及运行过程,并从投资进入方式、产业链规模、资金筹措及政府管理四方面进行了策略研究,指出核心利益主体可以充分利用多元化融资渠道,根据自身条件、投资进入环节和进入区域进行投资方式选择以及根据收益原则进行产业链规模、基地农户规模选择的策略;政府则可以从倡导绿色消费、完善猪肉产品质量管理体系以及提升猪肉产业链产品(质量)供给能力三方面进行宏观管理以促进产业链稳定运行。

【Abstract】 Based on pertinent literature, consultation of experts and investigation, applying theories of system analysis and decision analysis, the paper studies the organization patterns of high quality pork chain as following procedure: Trend and Theoretical Study-Practical Study- Evaluation and Selection-Implementation. The purpose of the paper is not only to provide scientific bases for the investors to select organization pattern, including those who have already invested to high quality pork chain and those who are going to, but also provide ideas for governments to accelerate agriculture industrialization, improve china meat products competition in the international market, and safeguard national food security. The paper includes:1) The paper has systematically conducted study about the connotation and features of pork chain, concluded and summarized the existing situation of domestic and abroad pork chain in the stages of consumption, retail, storage and transportation, hog slaughtering, raising, multiplying, breeding as well as and related industries, pork chain organization patterns etc. Then, the paper has studied the interaction mechanism among customers’ demand, quality supplying capacity of the chain and concerning governmental quality control system of product. By comparison and deduction analysis, the paper points out the development obstacles of china pork chain, indicates the importance and developing trend for establishing suitable organization of pork chain to ensure high quality pork supply.2) The paper has systematically analyzed pork products quality features, studied the mechanism that how the pork product quality is formed with the aid of variable analysis method, and pointed out the intrinsic demand for implementing integration management for the organization of high quality pork chain. The paper also has approached the action mechanism of integration management industry chain from overall objective, functional bodies, key interest body, value creation and integration ways of the various functional bodies, discussed the characteristics of the functional bodies, the key interest body and the value creation of high quality pork chain, and probed the intrinsic influence of key interest body’s investment stages in pork chain and investment mode to the organization pattern of high quality pork chain. Finally, from theoretical points, the paper describes the features and effects of four main organization patterns of high quality pork chain, including contract pattern, mixed pattern, vertical integration pattern and mixed vertical integration pattern, under each pattern, there are various possibilities.3) Based upon the study of national level leading enterprises in agriculture industrialization and authentication enterprises for pork certification, the paper has described the present situation of China high quality pork chain, and by comparison and induction, the paper has analyzed the characteristics of the organization and the organization patterns of China existing high quality pork chain from the aspects of functional bodies, key interest body, and the chain evolvement etc. It is found that in practice contract pattern and vertical integration pattern has been seldom used, but mixed pattern and mixed vertical integration pattern have been widely applied. The paper indicates that the conflict between pork supplyand demand, national security limit for food, development of agriculture industrialization, and support of pertinent theories are the reasons for forming existing chain patterns, and integration management pork chain have strong impact for consumers, governments and relevant bodies of the chain.4) Seven typical organization patterns of high quality pork chain have been selected according to theoretical and practical analysis results. Then, the hierarchical evaluation indexes system for high quality pork chain organization pattern has been established and applied to evaluated various typical patterns in quality, quantity, cost, difference, sensitivity and sustainability.
